Being in London over the summer rejuvenated my love of Europe.
I’d constantly get lost in thought over how much travelling I would do if I lived there permanently. So, so many amazing options.
But in the meantime, I waltz over to a number of fabulous blogs to get my European fix. Not only do these ladies get to call this continent their home but they’ve become serious experts in the fields of expat living and travelling.
So in an effort to learn more about Europe and to introduce you to some of my favorite blogs, I bring you the second instalment of my “48 Hours In…” series! They get to brag and we get to learn a little something. Sounds pretty great don’t you think?
Today I bring you Rachael of Let’s Be Adventurers, a SoCal expat living in Amsterdam. If that wasn’t a cool enough gig, she’s marrying her Dutch beau Christian on a beach in Mexico this fall, then taking off for a six month adventure around Asia and the Middle East and then moving to San Francisco.

Ever since first visiting Amsterdam in 2005, I have never tired of the laid-back vibe of this beautiful city – the most magical moments in Amsterdam are spent biking along picturesque canals usually stopping along the way to dangle your feet over the edge and enjoy the view. Happy Labor Day friends!
Long weekends are just the best, so I hope you’re all enjoying this extra day off.
I’m currently making the most of this holiday with a visit to a city that’s been on my California bucket list from the very beginning – Palm Springs.
Lucky for me a very good friend of mine was also up for something fun and in the sun. Her words exactly :)

Months of scheming and a combination of perfect timing, logistics that fell right into place and having the right people in the right place at the right time meant I was able to fly home for a few days to surprise Riley for her big 2-5.
I’m sneaky like that.
It also gave me the chance to visit my fellow schemer Heather at her lovely little place in Huntsville (a city about 2.5 hours north of Toronto in the beautiful Muskoka region of northern Ontario – for all you non-Canadians!) for a few days before the big surprise.

I always admire the creative travel infographics I see floating around the world wide web so I thought it would be a fun idea to make a visual record of how I got around, how many photos I took, other cities visited, the number of afternoon teas and other fun facts during my two months living in this amazing city.
Although I didn’t keep a strict numerical recount, these are all based on memory recollections and very educated guesses.

Towards my last few days in Europe there were certain things I really began to crave and homemade smoothies were at the top of that list.
Not having my blender all summer deprived me of constant access to these yummy and nutritious blended beverages of goodness that I was used to having almost everyday in some form or another.
So since said blender had a really lonely summer, I’m trying to give it as much love as possible by churning out lots of different smoothies and this almond butter banana one I made yesterday is the latest one. « Read the rest of this entry »
